Ingredients:

  • 1/2 cup celery
  • 1/2 tsp salt
  • 2 slices bread
  • 2 tblsp light olive oil
  • 1 cup cheese

Directions:

  1. Saute diced onion, diced celery in olive oil until onion is clear. Add salt, brown sugar and two cans of Hunt's whole tomatoes. Toast two slices of bread, remove crust and cut into cubes, mix into tomato misture. Cook over low heat until thickened about 30 minutes. Cover top with grated cheese and serve immediately. Freezes well.
