Baked Red Snapper

Ingredients:

Directions:

  1. Preheat oven to 350°F.
  2. Place fish in greased baking pan; sprinkle with pepper to taste.
  3. Drizzle lemon juice over fish.
  4. Bake for 10 minutes.
  5. In a saucepan combine celery, onion, green pepper and vegetable juice.
  6. Simmer, uncovered for 10 minutes.
  7. Remove fish from oven; drain off all excess liquid.
  8. Pour the simmered vegetable sauce over fish.
  9. Return fish to oven and bake 15 minutes more or until fish flakes easily when tested with a fork, basting with vegetable sauce occasionally.
