Ingredients:

Directions:

  1. Bake potatoes until tender.
  2. Cool, cut into cubes.
  3. Melt butter or margarine in large saucepan.
  4. Whisk in flour and cook over med heat 1 minutes, stirring constantly.
  5. Heat milk in separate pan.
  6. Slowly stir warm milk into flour mixture, whisking to maintain smooth texture.
  7. Heat through over medium burner but do not boil.
  8. Add potatoes, grated cheese, and sour cream.
  9. Heat until cheese is melted and potatoes are warmed through.
  10. Stir in green onion and bacon, reserving a little for garnish if desired.
  11. Serve hot.
