Ingredients:

Directions:

  1. Mix the graham crackers and artificial sweetener, then add margarine and mix with a fork until completely moistened.
  2. Press mixture into the bottom and up 1/3rd of the side of a 9-inch springfoam pan.
  3. Refrigerate for 1 hour.
  4. Preheat oven to 350°F.
  5. Blend eggs, egg whites, artificial sweetener, and vanilla extract.
  6. Gradually add cottage cheese until very smooth.
  7. Pour on top of graham cracker crust and top with cinnamon and nutmeg.
  8. Bake for 45 minutes or until firm.
  9. Turn off oven but leave cheesecake in for one hour with the door open.
  10. Chill overnight.
  11. Top with crushed strawberries before serving.
