Baked Goat Cheese With Mixed Lettuces

Ingredients:

Directions:

  1. Carefully slice goat cheese into 8 disks about 1/2 thick.
  2. Pour olive oil over disks and sprinkle with chopped herbs.
  3. Cover and store in a cool place several hours or up to a week.
  4. Preheat oven to 300.
  5. Cut baguette in half lengthwise and dry out in oven for 20 minutes.
  6. Grate into fine crumbs on a box grater or in a food processor.
  7. Preheat oven to 400 then remove cheese disks from marinade and roll in breadcrumbs.
  8. Coat thoroughly then place on small baking sheet and bake 6 minutes until cheese is warm.
  9. Measure vinegars in a small bowl and add a big pinch of salt.
  10. Whisk in oil and a little freshly ground pepper then taste for seasoning and adjust.
  11. Toss lettuces lightly with vinaigrette and arrange on salad plates.
  12. With a metal spatula carefully place 2 disks of the baked cheese on each plate and serve.
