Ingredients:

  • 1 lb (2 cups) dry navy beans
  • 2/3 cup brown sugar
  • 1/4 cup molasses
  • 1/4 lb salt pork
  • 1 medium onion, sliced

Directions:

  1. Rinse beans; add to 2 quarts cold water.
  2. Bring to boiling; simmer 2 minutes; remove from heat; cover; let stand 1 hour.
  3. (Or, add beans to water; soak overnight.)
  4. Add 1/2 teaspoon salt to beans and soaking water; cover; simmer till tender, 1 hour.
  5. Drain, reserving liquid.
  6. Measure 2 cups liquid, adding water if needed; mix with sugar, mustard, and molasses.
  7. Cut salt pork in half; score one half.
  8. Grind or thin-slice remainder.
  9. In 2-quart bean pot or casserole, combine beans, onion, and ground salt pork.
  10. Pour sugar-bean liquid over.
  11. Top with scored pork.
  12. Cover; bake at 300 degrees for 5 to 7 hours.
  13. Add more liquid if needed.
  14. Serves 8.
  15. *For more traditional New England baked beans, decrease brown sugar to 1/3 cup and increase molasses to 1/2 cup.
