Bacon Fried Rice

Ingredients:

  • 4 cups cooked white rice (can sub brown for a different texture, flavor), cooled(leftover is fine!)
  • about 1tsp rice vinegar
  • 1/4-1 tsp red pepper flakes and or a healthy dash of hot chili sauce
  • dash(and i mean a dash) of sesame oil (optional)
  • couple tsp soy sauce or teriyaki sauce(i greatly dislike teriyaki, and can barely stand soy alone, so i use a sauce called dale's. it's about all i can handle

Directions:

  1. Add vinegar to rice and toss well See Photo. Set aside.
  2. In medium skillet or wok(I like the texture and flavor that cast iron brings, so I use it) brown bacon pieces until done.
  3. Set bacon aside but leave grease.
  4. Add red pepper flakes and rice to pan and cook over medium heat, stirring frequently, so make sure every grain gets covered with the fat. See Photo
  5. Add beaten eggs and immediately stir quickly to not get big lumps of scrambled egg. :) You are just looking for the lil bits to run throughout the rice.
  6. Continue to stir and toss well and add bacon, soy sauce, sesame oil, green onions and pepper.
  7. Cook until just warmed through.
  8. *PLEASE NOTE* This rice doesn't taste like bacon, exactly, but the bacon, does...errr...obviously. ;) The point is, if you just want a flavorful fried rice but not to have bits of bacon, simply fry half a pound of bacon, remove it and save it or use it for breakfast the next morning, and continue with the recipe, not adding the bacon back in. You'll still get a wonderful, different variation of a classic dish. :)
