Asparagus And Red Potato Salad

Ingredients:

Directions:

  1. Cut asparagus and steam to desired tenderness, I do 3 minutes
  2. Plunge into ice bath to stop cooking
  3. Boil potatoes and set aside to cool
  4. Drain canned artichokes
  5. Chop parsley and chives
  6. Crumble blue cheese
  7. When potatoes have cooled drain asparagus, cut potatoes in 1/2
  8. Put all above ingredients into salad bowl
  9. Prepare salad dressing
  10. Add desired amount of dressing and pepper to salad and mix well
