Ingredients:

  • 1 garlic clove
  • 1/4 tsp coarse salt
  • 2 tbsp sugar
  • 1/4 cup hot water
  • 1/4 cup rice vinegar
  • 2 tbsp fish sauce
  • 1/2 tsp red chili sauce , such as sambal oelek
  • 1 scallion , thinly sliced crosswise
  • 1 lime , juice of

Directions:

  1. Chop garlic and coarse salt. Using the back of your knife scrape mixture to create a paste. In a bowl dissolve sugar and hot water. Add garlic paste and the rest of the ingrediants, mixing well. Cover & refrigarate to allow flavors to blend.
