Ingredients:

  • 3 smallish cucumbers, washed, halved and cut into bite sized chunks
  • 4 or more cloves garlic , smashed with the side of a cleaver, peeled, roughly chopped
  • 1/4-1/2 tsp salt
  • 1 tsp sugar or to taste
  • 1 tbsp white vinegar or to taste
  • hefty pinch korean red pepper powder or 1-2 crushed dried red chilies.
  • a good pinch crushed sichuan pepper (optional)

Directions:

  1. Taste (adjust)
  2. Let sit 20 minutes or more (optional)
  3. Serve
  4. (you can add a minute pinch of MSG or a drizzle of chile)
