  1. Combine chicken, bean sprouts, snow peas and scallions.
  2. Make dressing using oil, soy sauce, ginger, salt, pepper and sugar.
  3. Pour dressing over chicken mix.
  4. Add celery and water chestnuts.
  5. Serve chilled.
