Apricot Yogurt Baked Cheesecake

Ingredients:

Directions:

  1. Preheat oven to 180c.
  2. Place the apricots in a saucepan, just cover with water and simmer for 5 minutes until tender.
  3. Allow to cool.
  4. Place apricots and water in a mixing bowl, then stir in the yogurt, sugar or honey, flour, sultanas and eggs.
  5. Mix well and pour into cheesecake dish or your prepared crust.
  6. Bake for 45 minutes, or until browned and set.
  7. Cool on a rack.
