Ingredients:

  • 2/3 cup dried apricot
  • 1 cup flour
  • 2 eggs
  • 1 cup brown sugar , firmly packed
  • 1/3 cup flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup nuts, chopped

Directions:

  1. Place the dried apricots into boiling water for 10 minutes; drain.
  2. Chop cooled apricots; set aside.
  3. Preheat oven to 350 degree F.
  4. Grease an 8-inch square baking pan.
  5. In a small bowl, mix together butter, granulated sugar, and 1 cup flour.
  6. Press this mixture into prepared pan.
  7. Bake 25 minutes; set aside.
  8. In a small bowl, beat together eggs and brown sugar.
  9. Fold in 1/3 cup flour, baking powder, and salt; mix till combined.
  10. Stir in vanilla, chopped apricots, and nuts.
  11. Spread evenly over top of baked layer.
  12. Bake 30 to 40 minutes.
  13. Remove from oven and cool on wire rack.
  14. Sprinkle with confectioner's sugar.
  15. Cut into squares.
