Apricot-orange Kugel

Ingredients:

  • 1 1 lb package of egg noodles
  • 1/2 cup of dried ( sulfite free) apricots , cut into slivers
  • 3/4 sugar
  • 1 stick of melted butter
  • 1 lb. of sour cream
  • 1 cup of small curd cottage cheese
  • 1 tbsp of orange rind
  • 1 cup of fresh navel orange juice
  • 2 tsp of vanilla
  • generous pinch of salt
  • 1/2 cup of apricot preserves plus 1 tbsp
  • 1/2 cup of orange marmalade , plus 1 tbsp

Directions:

  1. Preheat the oven to 350 degrees.
  2. Grease a 9 x 13 baking dish well with butter.
  3. Cook the noodles following the package directions. Don't salt the water for this dish.
  4. Drain very well.
  5. Toss them with the apricots and almonds.
  6. Beat the sugar, melted butter, sour cream, cottage cheese, rind and juice and vanilla until as smooth as possible.
  7. Beat in the egg yolds until thoroughly combined.
  8. Fold this mixture gently into the prepped noodles.
  9. Beat the egg whites until stiff with a pinch of salt.
  10. Fold these carefully into the noodle mixture.
  11. Gently pour into the baking dish.
  12. Bake for 45 minutes.
  13. Mix the apricot and orange marmalade and spread over the baked noodle kugel.
  14. Return to oven and bake for another 15 minutes to glaze the marmalade on top of the lucious creamy noodle goodness.
  15. Let rest for 10 minutes. cut in wedges and serve warm.
  16. Or cool completely and enjoy just as much.
