Directions:

  1. Mash together the cream cheese and blue cheese crumbles with a fork. Roll into small marble sized balls and refrigerate for 10-30 minutes.
  2. Split open each apricot so it looks like a clam. Stuff with a cheese ball and sprinkle pistachios on exposed cheese.
