Ingredients:

  • 2 cups pancake mix
  • 2 eggs
  • 1 cup applesauce
  • 1/2 cup milk

Directions:

  1. Prepare griddle with nonstick cooking spray.
  2. In a bowl, combine pancake mix and pumpkin pie spice.
  3. Stir in eggs, applesauce, lemon juice and milk until well combined.
  4. Pour 1/4 cup batter per pancake onto hot griddle. Cook 1-2 minutes per side.
