Apple-Spiked Pumpkin Bread

Ingredients:

  • 1 cup flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1 cup pumpkin
  • 1 large egg
  • 1 tsp cinnamon
  • 1/4 tsp allspice
  • 3/4 tsp salt

Directions:

  1. Preheat oven to 350 degrees
  2. Spray 9 x 5 inch loaf pan with cooking spray
  3. In one bowl combine flour, oats, baking soda, salt, allspice and cinnamon.
  4. In another bowl combine brown sugar, pumpkin, egg, egg white and applesauce.
  5. Stir the dry stuff into the wet stuff just until you don't see any dry stuff.
  6. Fold in the chopped apples.
  7. Bake 350 degrees for about 1 hour.
