Apple Sauerkraut Potato Salad

  1. In 2 quart saucepan over medium heat cook potatoes covered in 2” boiling water 12 minutes.
  2. Meanwhile in large bowl whisk together vinegar, oil, water and pepper then mix in apples.
  3. In large nonstick skillet over medium heat toss and brown sausage for 10 minutes.
  4. Remove with slotted spoon then drain on paper towels.
  5. Add potatoes, sauerkraut, onions, parsley and sausage to apple mixture then toss gently.
  6. Season with salt then serve immediately.
