Ingredients:

  • for the yeast dough base
  • 400 g flour
  • 1 packet dry yeast
  • 1 pinch salt
  • 1 tbsp sugar
  • 1 egg
  • 150 ml lukewarm milk
  • for the topping
  • 1 to 1.5 kg of apples
  • 750 g quark
  • 150 g sugar
  • 1 packet of vanilla sugar or 2 tsp vanilla
  • 4 eggs

Directions:

  1. First combine flour with dry yeast, a pinch of salt and sugar in a bowl with a spoon.
  2. Add softened margarine, 1 egg , milk and beat with the electric hand mixer into a smooth dough to form a dough which leaves sides of the bowl and becomes a smooth ball of dough.
  3. Lift out the dough, sprinkle the bottom of the bowl with a little flour, put the dough back into the bowl and cover the dough with a moist cloth ,seal bowl in a large plastic bag.
  4. Keep bowl, covered in a warm place for a good 30 minutes.
  5. The dough volume should be doubled after, if not let rise a little longer maybe 20 more minutes or as needed so the dough has risen doubled
  6. In the meantime, core apples. peel cut in half, and quarter again, cutting into slices for the cake
  7. When the dough has doubled , punch down knead lightly again
  8. Line the cookie sheet ( with parchment paper )37 x 40 cm pan
  9. Roll out the dough to the size of the sheet and lay out.
  10. Let dough rest 15 to 20 minutes
  11. Meanwhile, prepare the cheese layer.
  12. Beat eggs, sugar, vanilla sugar in a mixing bowl until fluffy.
  13. Gradually stir in the quark to blend well
  14. Spread the cheese mixture evenly over the dough surface.
  15. Cover evenly with the the apple slices
  16. Preheat oven to 200 C.
  17. Place cake in the middle of the oven and bake for 45 minutes or tested done
  18. After cooling completely, cut the cake into pieces and enjoy it freshly baked.
  19. May be gently reheated the next day, very briefly, so then the cake will tastes like fresh. again
  20. This cake can freeze very well.
