Ingredients:

  • 1 egg
  • 1 tbsp water
  • 5 -6 tart apples (2 1/2 to 3 lb)
  • 1/2 cup packed light brown sugar
  • 2 tbsp flour
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 2 tbsp butter

Directions:

  1. Supply pie crust of your choice.
  2. Heat oven to 425 degrees.
  3. Beat egg and water and brush pastry with this glaze.
  4. Refrigerate shell until ready to fill.
  5. Squeeze juice from lemon.
  6. Peel and slice apples, maintaining a uniform size so they bake evenly.
  7. Toss apples, lemon juice, brown sugar, flour, nutmeg, and cinnamon.
  8. Fill pie shell.
  9. Dot with butter.
  10. Top pie with second shell and crimp edges.
  11. Poke with fork or make a few slices with a knife.
  12. Brush edges of crust with egg glaze.
  13. Sprinkle crust with granulated sugar if desired.
  14. Bake 10 to 12 minutes, then reduce heat to 350 degrees and bake until golden brown, 40 to 45 minutes.
  15. Cover edges with foil if they are browning too fast.
