Apple Oatmeal Muffins

Ingredients:

  • 1 cup oats
  • 1/2 cup brown sugar
  • 3/4 cup milk
  • 1/3 cup canola oil
  • 1 egg
  • 1 tsp vanilla
  • 1 1/2 cups peeled and chopped apples (2 medium apples)

Directions:

  1. Preheat oven to 400 degrees.
  2. In a bowl, combine pancake mix, oats, brown sugar, and cinnamon.
  3. Stir in milk, oil, egg and vanilla. Fold apples into batter.
  4. Line a muffin pan with paper liners or cooking spray.
  5. Divide batter evenly into muffin cups. Bake 17-22 minutes.
