Ingredients:

  • 1/2 cup sugar
  • 1/4 cup margarine (we use earth balance soy free)
  • 1 tsp vanilla
  • 1 cup flour (rice works for gluten or wheat free)
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 cup water

Directions:

  1. Preheat oven to 350 degrees.
  2. Core, peel, and dice apples (about 3 cups).
  3. Mix together the flour, cinnamon, nutmeg, baking powder, and baking soda. Set aside.
  4. In a separate mixing bowl, cream the sugar, margarine, and vanilla until fluffy (depending on the margarine you use, it might not get very fluffy, but blend at high speed for several minutes).
  5. To the creamed mixture, alternately add the dry ingredients and water while mixing. Scrape the sides of the bowl and finish mixing.
  6. Pour the batter into an 8 square glass baking dish.
  7. Bake 40-45 minutes, or until slightly crispy around the top and edges.
  8. Serve warm.
