Ingredients:

  • 3/4 cup brown sugar , firmly packed
  • 1 egg
  • 1 cup flour
  • 1/2 tsp cinnamon
  • 1/4 tsp clove
  • 1/4 tsp nutmeg
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 cup applesauce
  • 1 cup quick oats
  • 1/2 cup raisins

Directions:

  1. Preheat oven to 350 degrees. Spray medium-size muffin tins with non-stick cooking spray.
  2. Cream together the butter and the brown sugar. Add the egg and beat well.
  3. In a separate bowl, mix the dry ingredients together. Add to butter mixture. Mix in the applesauce, then the oats. Finally add the raisins and the pecans.
  4. Scoop batter into muffin tin, and bake for 25 minutes. Best served warm.
