Ingredients:

Directions:

  1. Preheat the oven to 400.
  2. Start by heating the oil in a saute pan and cooking the eggplant until very soft about 15 minutes. Add the garlic in at the last 2 minutes or so.
  3. Spread the eggplant and garlic mixture onto a greased 9x13 baking dish.
  4. Start layering the tomatoes and zucchini alternately down the dish making rows.
  5. Drizzle with olive oil and sprinkle with S&P and as much Italian Seasoning is desired.
  6. Place onion rings all over the top and and bake for 25 minutes. See Photo
  7. Add parmesan and bake an additional 5 minutes. Enjoy!
