Angel Hair Pasta With Sun-Dried Tomatoes and Goat Cheese

Ingredients:

Directions:

  1. Heat large pot to boil pasta.
  2. Drain the tomatoes and save the oil. Heat a large skillet on medium heat. Add 2Tbsp of the oil from the sundried tomatoes.
  3. Saute the onions in the oil and then add the garlic. Cook for one minute. Add the tomato paste and cook for another 2 minutes.
  4. Pour in the white wine and add the sundried tomatoes. Simmer this liquid till it is reduced by half, around another 2 minutes.
  5. Put pasta in boiling water and cook to al dente, about 8 minutes.
  6. Save 1/2 cup of pasta water and then drain the pasta.
  7. Add the pasta to the tomato mixture and toss. If the pasta is too dry add some of the reserved pasta water.
  8. Salt and pepper to taste. Then crumble in goat cheese and add parsely. Stir lightly.
  9. Serve in bowl.
