Amy's Kickass Chicken Marinade

Ingredients:

  • 1/3-1/2 cup soy sauce
  • 1/3-1/2 cup olive oil
  • 1/3-2/3 cup fresh ginger
  • 6 -9 garlic cloves
  • 4 -6 scallions
  • 1 -2 lime zest
  • 1 to 2 lime , juice of
  • 1/3-2/3 cup cilantro
  • 1/3-2/3 cup apricot preserves
  • 1 -2 tsp red pepper flakes (optional)

Directions:

  1. Put all ingredients in a large ziploc bag;
  2. Smash and finely chop garlic.
  3. Finely chop ginger, cilantro and serranos.
  4. Cut bunch of scallions into 1 inch pieces including an inch or two of green.
  5. Grate the lime zest(s) with a mini grater and juice the limes into the bag.
  6. Marinate for 1-6 hours or overnight .
  7. Grill, Baby, Grill!
