Almond Breaded Tilapia Nuggets With Cajun Rub Serv...

Ingredients:

  • tilapia cut into two-inch by two- inch strips.
  • cajun rub
  • 1 tsp sea salt
  • 2 cups of barley bread crumbs or whole wheat bread crumbs.
  • 1/2 cup sliced almonds course ground
  • 4 tbsp of fresh parsley rough chopped.
  • 1/2- tsp cayenne
  • 1/2- tsp ground ginger
  • 1- cup buttermilk
  • 1 large egg
  • for frying
  • 4 tbsp sweet butter
  • 4 tbsp olive oil
  • honey habanero bbq sauce
  • 1/2 cup of honey
  • 1/4-cup habenero chipotle bb-q-sauce recipe (see my recipe)

Directions:

  1. Beat the egg and add the buttermilk and beat until blended.
  2. Combine the rub ingredients in a small bowl set aside
  3. Combine the breading ingredients set aside.
  4. Sprinkle the Tilapia with the Cajun Rub and rub it evenly on both sides of the fish.
  5. Add the flour to a bowl and toss the Tilapia to coat shake off excess flour.
  6. Heat a fry pan with the oil and butter on medium high heat.
  7. Dip a few pieces at a time into the buttermilk mixture and coat generously with the breadcrumb mixture.
  8. Fry until golden on each side and place on cookie sheet lined with a paper towel.
  9. Repeat until all the tilapia is finished.
  10. Serve on a warmed plate with Honey BBQ Sauce and a dollop of Greek style yogurt.
