Ingredients:

Directions:

  1. Chop onions and saute in oil until translucent.
  2. Stir in cayenne, garlic and ginger.
  3. Add carrots and saute a couple more minutes.
  4. Mix in potatoes and broth, bring to a boil, then simmer until vegetables are very tender.
  5. In a blender or food processor, puree the vegetables with the cooking liquid, tomato juice and peanut butter.
  6. Return the puree to soup pot, tast and adjust seasonings.
