Ingredients:

Directions:

  1. Blend 1 cup lime juice, garlic, achiote paste, oregano, and cumin in processor until smooth.
  2. Season marinade to taste with salt and pepper.
  3. Place marinade in medium bowl.
  4. Add chicken; stir to coat.
  5. Cover and refrigerate chicken overnight.
  6. Place chilies on small baking sheet (on a 4 rack).
  7. Roast until soft, about 10 minutes.
  8. Stem and seed chilies.
  9. Transfer chilies to processor.
  10. Add pureed guava, reserved guava syrup, cilantro, and remaining 1/2 cup lime juice.
  11. Process until smooth.
  12. Season sauce to taste with salt and pepper.
  13. Transfer to medium bowl. (Sauce can be made 1 day ahead.
  14. Cover and refrigerate.
  15. Bring to room temperature before using.).
  16. Remove chicken from marinade.
  17. Divide chicken among 8 eight-inch wooden skewers.
  18. Grill until chicken is cooked, turning once, about 6 minutes side.
  19. Serve, passing guava sauce separately.
