Ingredients:

  • 3 tbsp margarine
  • 3 eggs
  • 1 1/4 cup oil
  • 1 1/2 cup sugar
  • 1 tsp vanilla
  • 2 cups flour
  • 1 tsp cinnamon
  • 1 tsp cloves or allspice

Directions:

  1. Preheat oven to 350 F
  2. Grease loaf pan
  3. Grate the zuchinni (approx. 1 large) and set aside
  4. Add each ingredient one at atime and mix until well blended
  5. Add the zuchinni
  6. Bake until inserted toothpick comes out clean
  7. Can be served warm or cold
  8. ENJOY
