Ingredients:

  • 3 eggs
  • 1 cup oil
  • 2 cups sugar
  • 2 tbsp vanilla
  • 2 1/2 cups flour
  • 1 tsp salt
  • 1 1/2 tsp baking soda
  • 2 1/2 tsp baking powder
  • 1/2 cup baking cocoa

Directions:

  1. Blend the eggs, oil, and sugar together in a large mixing bowl. Add the vanilla, flour, salt, baking soda, baking powder, and cocoa. Mix well. Fold in the zucchini and nuts. Spoon into 2 greased 9 x 5 inch loaf pans. Bake at 350 F for one hour.
