Ingredients:

  • 1/2 cup shortening
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 3 1/2 cups flour

Directions:

  1. Cream together the shortening and sugars. Add eggs and beat well. Beat until fluffy.
  2. Stir in zucchini. Add dry ingredients. Add chopped nuts and dates.
  3. Drop by teaspoonfuls into greased cookie sheet. Bake at 375 degrees for 12-15 minutes.
  4. You can substitute chocolate chips or raisins for dates.
