Ingredients:

  • 1 tbsp olive oil
  • 3 cups (about 3 medium) zucchini, sliced
  • 1/8 tsp (optional) red pepper, crushed
  • 1 1/2 cups loose-pack frozen whole-kernel corn
  • 1 cup (about 1 medium) seeded tomato, chopped

Directions:

  1. Heat olive oil in large skillet over medium-high heat. Add
  2. Zucchini, onion, and crushed red pepper; cook, stirring
  3. Occasionally, for 4 to 5 minutes or until vegetables are
  4. Tender. Stir in corn, tomato, and thyme; cook, stirring
  5. Occasionally, for 2 to 3 minutes or until heated through.
  6. Season with salt and pepper.
