Zucchini Almond Stir-fry

Ingredients:

  • 6 large zucchini
  • 1/2 cup almonds , slivered
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce

Directions:

  1. Cut zucchini into bite sized sticks or slices.
  2. Heat a non-stick pan over medium heat and add almonds.
  3. Cook for about 4-5 minutes until golden brown and lightly toasted.
  4. Stir constantly or they will burn.
  5. You can also toast them under a broiler/griller if you prefer.
  6. Set almonds aside.
  7. Add zucchini and garlic to pan.
  8. Cook until tender but not mushy.
  9. Add a small amount of water to the pan if needed to prevent burning or sticking.
  10. Stir through the soy sauce and almonds and serve.
