Zesty Mushroom Scrammble

Ingredients:

Directions:

  1. Wash & slice mushrooms
  2. Dice garlic
  3. Heat pan with olive oil to coat
  4. Beat eggs with water
  5. Sautee mushrooms, garlic, and oregano over medium high
  6. Add a dash of vinegar and soy as the mushrooms reach perfection (i.e. aroma + glossy hue)
  7. As soon as liquid evaporates add just a touch extra olive oil to keep the eggs from sticking
  8. Add egg mixture and cook on low until bottom surface forms, then turn delicately and finish cooking until desired texture is reached
  9. Divide eggs among two plates, add yogurt and black pepper over each serving
  10. Enjoy!
