Ingredients:

Directions:

  1. Heat large pot and add oil, onion, pepper, garlic, carrot and seasonings.
  2. Cook until onion becomes soft, then add all ingredients.
  3. Cover and simmer for about an hour, or until potatoes are tender.
  4. Top with shreadded cheddar and crumbled crackers.
