Yummy Summer Chicken Salad

Ingredients:

Directions:

  1. Shred chicken and keep aside.
  2. Drain pineapple - reserve the juice.
  3. Heat oil in a frying pan and fry onion until tender.
  4. Stir in curry powder and chutney.
  5. Remove from the heat and stir through mayonnaise and 1/4 cup of the pineapple juice.
  6. Tear lettuce in half and place on serving platter or large bowl.
  7. Top with chicken, mango, avacado and macadamia nuts.
  8. Drizzle with dressing.
  9. Season with salt and pepper if desired.
