Ingredients:

Directions:

  1. The night before: Peel cukes and slice to desired thickness.
  2. Slice or chop onion to desired thickness.
  3. Mix together in a bowl with 1 T. kosher salt.
  4. Cover with a heavy plate and refrigerate overnight.
  5. The next morning: Drain cukes, but do NOT rinse.
  6. Mix the remaining ingredients in a separate bowl, until smooth.
  7. Pour over cukes/onions and mix thoroughly.
  8. Cover and refrigerate for AT LEAST 2-3 hours - longer for best flavor.
  9. ENJOY!
