Yorktown Crab Soup

Ingredients:

  • 1/4-1/2 cup butter
  • 1 tbsp flour
  • 1/2 tsp salt
  • 1/8 tsp red pepper
  • 1/8 tsp mace
  • 1/8 tsp nutmeg
  • 1/2 tsp fresh parsley (optional)
  • 1/2 pint milk
  • 2 cups crabmeat
  • 3/4 pint cream
  • 1/4 cup sherry wine

Directions:

  1. Melt butter in top of double boiler.
  2. Add flour, seasonings and milk.
  3. Stir constantly unti thick.
  4. Add crabmeat and stir.
  5. When ready to serve, add heated cream and sherry.
