Whole Wheat Banana Muffins (Light)

Ingredients:

  • 1 cup. skim milk
  • 1/4 cup. vegetable oil
  • 1/4 cup. honey
  • 1/4 tsp. nutmeg
  • 1 tsp. cinnamon
  • 1/2 cup. walnut pieces

Directions:

  1. Preheat oven to 400 degrees. Grease bottoms only of muffin pan or use paper liners. Beat egg, then combine with milk, oil, honey, and banana. Mix in remaining ingredients until just moistened (batter should be lumpy). Fill muffin cups full and bake 20-25 minutes. Makes 12 muffins.
