White Bean Salad With Roasted Red Pepper Dressing

Ingredients:

Directions:

  1. Put oil, lemon juice, garlic and peppers into a blender and process until smooth; transfer to a large bowl. Add feta, onions, parsley, oregano, beans, salt and pepper and toss gently to coat.
  2. Serve immediately or cover with plastic wrap and refrigerate overnight to allow time for the flavors to meld. Bring back to room temperature before serving and garnish with a bit more feta cheese, if you like.
  3. Note: You can serve on a bed of lettuce, or on top of a few nice romaine leaves.
