Ingredients:

Directions:

  1. In a sauce pan add enough canola oil to coat bottom of pan
  2. On medium heat cook the onions and garlic until soft
  3. Add the oregano, cumin, sea salt, fresh ground black pepper, Chipotle Chile Pepper
  4. Northern Beans and the water and simmer for 20 minutes
  5. To serve place some Grated Quesso cheese and the crushed tortilla chips in the bottom of each bowl
  6. Ladle 3 cups of Chile into each bowl
  7. Place a dollop of Mascarpone cheese on top
  8. Place a dollop of salsa on top
  9. Sprinkle a tablespoon of minced bell peppers for garnish
  10. Serve
