Ingredients:

Directions:

  1. Cut the watermelon into large chunks.
  2. Slice the red onion into individual pieces.
  3. Slice the jicama into small slivers.
  4. Mix together above ingredients and chill.
  5. Just before serving:.
  6. Sprinkle the above with the salt, drizzle the olive oil and lime juice and sprinkle with chili powder.
  7. Adjust all to taste.
  8. Serve immediately, this salad does not hold over well.
  9. Enjoy.
