Directions:

  1. Cut watermelon into 1 inch slices. Using a small, round and deep cookie cutter, cut out rounds of watermelon (or you can cut into nice cubes with a knife). place watermelon rounds/cubes on appetizer spoons. Squirt balsamic reduction across watermelon, top with a torn piece of mint and a piece of feta.
