Warm Potato Salad

Ingredients:

  • 250 g bacon, diced (1 cup)
  • 125 ml oil (1/2 cup)
  • 125 ml chutney or sweet chilly sauce if you don'tsp have (1/2 cup)
  • 125 ml vinegar (1/2 cup)
  • 15 ml corn flour (1 tblsp + 1 tsp)
  • 250 ml milk (1 cup)

Directions:

  1. Dice the potatoes.
  2. Put in a pot and boil until soft (but not too soft)
  3. Put bacon in pot and stirr until crispy or how you like it.
  4. Sote the onion in 25 ml (2 tbsp) of oil.
  5. Stirr in the rest of the oil, vinegar and chutney in.
  6. Let it simmer for 2 minutes.
  7. Mix the milk and corn flour toghether.
  8. Stirr the milk mixture in with the vinegar.
  9. Let it simmer for another few minutes.
  10. Mix potatoes and bacon.
  11. Pour over the sauce.
  12. Mix lightly.
  13. Serve warm.
