Ingredients:

  • 500 -600 g flour ( all purpose)
  • 6 eggs
  • 2 tbsp vanilla
  • 500 ml milk

Directions:

  1. Beat all the ingredients in a large bowl, more flour may need to be added if it is a wet or humid day.
  2. Let the mix rest for 30 - 60 minutes before using (on the bench, not the fridge).
  3. Place a little butter in a crepe pan , swirl until bubbly and fragrant.
  4. Add about 1/3 a cup of mix and swirl until thin and the pan is coated. Cook for about 90 seconds, flip to the other side and cook for another 30-60 seconds.
  5. Serve hot or cold.
