No Brainer Never-Fail Blueberry Muffins

Ingredients:

  • 2 cups plain flour
  • 1/2 tsp salt
  • 1/2 cup butter
  • 1 cup sugar
  • 2 large eggs
  • 1 tsp vanilla
  • 1/2 cup milk

Directions:

  1. Preheat oven to 200 degrees celsius.
  2. Soften butter to room temperature.
  3. In a small bowl, sift flour, add baking powder and salt.
  4. In a large bowl, beat butter until fluffy, beat in sugar and eggs.
  5. Add the vanilla.
  6. Stir flour mixture into the butter mixture, alternately with milk.
  7. Fold in blueberries.
  8. Fill muffin tins which have been greased or lined with paper muffin cups.
  9. Bake for 25-30 minutes.
