Viv's Vegetarian Omelette

Ingredients:

  • 2 eggs
  • 2 tbsp water
  • 1/2 onion
  • 25 g capsicum
  • 1/2 cup frozen pea
  • 1 tbsp olive oil

Directions:

  1. Add water to eggs and beat
  2. Heat olive oil in omelette pan
  3. Add onion and sautee until soft
  4. Add capsicum and sautee for a few seconds
  5. Add frozen peas and defrosted spinach and cook till peas are defrosted
  6. Add tomato and cook for a minute
  7. Add beaten egg lifting sides as it begins to cook
  8. When the underside is cooked through, put the omelette under a grill until the top has cooked
  9. Serve with a green salad
