Vinegar Pie

Ingredients:

  • 1 1/4 cups sugar
  • 6 tbsp vinegar
  • 1/3 cup flour
  • 2 cups water
  • 3 tbsp butter
  • 1 1/2 tsp lemon extract

Directions:

  1. In medium saucepan mix together sugar, beaten egg yolks, vinegar (cider or white), flour and water.
  2. Cook over medium heat stirring constantly until thick.
  3. Remove from heat.
  4. Add lemon extract and butter.
  5. Continue to stir until butter has completely melted.
  6. Pour into baked pie crust.
  7. Top with meringue, made with left over egg whites, and bake in 350ºF pre-heated oven until golden brown.
  8. Let cool and serve.
