Ingredients:

  1. Preheat oven to 450
  2. Bake potatoes until done approx 1 1/2 hours
  3. Preheat the oil in a small skillet and saute' the garlic, green pepper , parsley and mushroom until soft
  4. Remove potatoes and spoon out the insides reserving the skins
  5. Combine potatoes, butter ,milk and 1/2 of the cheddar - mash
  6. Add garlic pepper mushrooms and mix.
  7. Fill the reserved skins with the mashed potatoes top with cheese and bake an additional 20 mins until cheese is melted.
